Delicious gluten-free, sugar & sweetener-free pear, apple & quinoa cake is healthy enough for breakfast or top with a drizzle of maple syrup or vanilla ice cream for dessert :)

Ingredients:
1 1/2 Cups Of Quinoa Flour
2 Tablespoons Ground Flax Seeds
1 Tablespoon Baking Soda
1/4 Teaspoon nutmeg (Cinnamon & ginger can be added as well)
1 Apple peeled, cored & diced
2 Ripe pears peeled & cored (1/2 pear diced)
1 Teaspoon vanilla extract
1/2 Cup apple sauce
1/4 Cup oil
2 Eggs
1/2 Cup water
1 Tablespoon Vinegar or Lemon Juice

Directions:
Preheat oven to 375 degrees
Mix all dry ingredients
Make a well in the center then add all wet ingredients
Mash 1 1/2 pears then blend well
Fold in the apple chunks  and vinegar
Place in a 7x9 pan and top with the other 1/2 diced pear

Bake at 375 for 35 minutes until a knife comes out clean.
Serve with a cuppa tea and a dollop of butter for breakfast or a drizzle of maple syrup or ice cream for dessert.

VEGAN VERSION
1 1/2 Cups Of Quinoa Flour
2 Tablespoons Ground Flax Seeds (Dry)
2 Tablespoons of ground flax mixed with 4 tablespoons of water (Wet)
2 Tablespoons Baking Powder
1/4 Teaspoon nutmeg (Cinnamon & ginger can be added as well)
1 Apple peeled, cored & diced
2 Ripe pears peeled & cored (1/2 pear diced)
1 Teaspoon vanilla extract
1/2 Cup apple sauce
1/4 Cup oil
1/2 Cup water
*Directions the same as above
