Pumpkin Spice Snowballs Recipe - Easy No bake Cookies
A spin on a traditional Newfoundland treat!
These Pumpkin Spice Snowballs are easy to make,
delicious & dare I say - healthy enough for breakfast!

Ingredients:
3 Cups quick cook oats
1 Can pumpkin
1 Tablespoon cinnamon
1/2 Teaspoon nutmeg
Pinch of sea salt
Maple syrup or brown sugar to taste
Coconut
Boiling water
Instructions:
Add everything to a mixing bowl except water, stir until ingredients are mixed.
Add a little boiling water at a time until oats are cooked and form a ball.
Let mixture cool then roll into balls and roll in coconut.
That's it!
These freeze really well to - so be sure to make a large batch :)
