Sugar-Free Blueberry Jelly Roll Recipe

It's all about texture and the sweetness of nature in this delicious sugar-free and gluten-free soft blueberry jelly roll. You can add a touch of sweetness if you like with a drizzle of maple syrup and a little cream or let the blueberries give you all the tangy sweetness you need.

Wild Blueberry Jelly Roll With Maple Cream 
8 Servings 
Prep/Cook time: 20 Minutes/7 Minutes 
Total time: 27 minutes 
Suitable for: Organic, Vegetarian, Paleo, Soy-free, Gluten-free, Nut-free, Dairyfree, No Refined Sugar, Non-GMO 

3 Organic & pastured egg yolks 
4 Organic & pastured egg whites 
1/8 Cup water 
1 TBS organic vanilla 
1/2 Cup organic coconut flour 
2 cups of frozen or fresh wild blueberries 
1/2 Cup coconut cream or yogurt 
2 TBS organic maple syrup (Optional)

Beat egg whites to form a meringue. 
Cream together yolks, vanilla & water. 
Sift in coconut flour. 
Fold the two together. 
Spread on a shallow floured pan and bake at 350 for 7 minutes. 
Flip out onto a damp tea towel and roll.  Set aside to cool. 
Simmer berries in a saucepan until thick and spreadable. 
Unroll the cake & spread with berries, re-roll and chill. 
Fold maple syrup into cream and serve. 
Add an extra drizzle of maple syrup over cake if you like it sweeter.
