They taste like little jelly doughnuts & they freeze well too.
Only 5 simple ingredients!
In a bowl mix together:
1/2 Cup quick cook oats
3/4 Cup coconut
1 Tablespoon Vanilla
2-4 Tablespoons of honey (For vegans use agave, maple or rice syrup)
Add boiling water a little at a time while stirring.
Approximately 1 cup of boiling water in total.
Mix until oats are cooked and the mixture is doughy (It should easily form a ball)
Once cooled to touch, roll into balls pressing your thumb in the center of each to make a hollow for jam filling.
Dust each ball with coconut and fill with your favorite jam.
