6 Servings:
6 Cups of beef broth (Homemade from pasture raised beef is best) or certified organic store bought.
1/2 cup uncooked organic wild rice
1/2 large onion diced
2 cloves garlic minced
1 large organic potato, diced
3 cups organic frozen mixed veggies (Peas, carrot, corn string bean blend)
Celtic salt, cracked black pepper & Cumin to taste.
I save all my drippings from roasts, chicken, turkey & bones and I freeze it. It was time to make some room in the freezer so I removed all of the beef drippings, let them thaw and added enough water to make 6 cups of broth.
Simmer the rice in the broth with the onions and garlic for 1-2 hours covered on low heat. The rice will swell and take up all the beef broth flavor and will resemble shredded beef in taste & texture.
Add the potato & frozen veggies, salt, pepper and toasted cumin and simmer covered until potatoes are softened.
