Zucchini Pasta Salad Recipe | Pastaless Low Carb Grain-free Gluten-free

We've had an abundant crop of zucchini this year.

Zucchini has been one of those bland vegetables I never really liked that much.
I have now developed a new love for zucchini so much so,
I think I will plant double or triple the amount next year.

Now for A fantastic pasta salad:
It looks and tastes just like my regular pasta salad!

Serves 4:
Shred one large or 2 small organic zucchini (4 cups)
Sprinkle with a little Celtic salt and place in a colander over a bowl 
to drain any excess liquid while you prepare the other ingredients.

In food processor finely chop:
1/2 organic sweet pepper
1 stalk organic celery
4 organic spring onions (green onions)
1 hot organic chili pepper (2 if your brave)
1 small organic dill pickle
Dice 1 medium organic tomato.
Squeeze the zucchini lightly against the colander to remove any excess juices.

To the shredded zucchini add:
All of the above veggies, plus:
2 tbp organic olive oil
1 tsp organic ACV (apple cider vinegar)
1 TBS raw Honey
1/4 cup fresh organic mayo (2 recipes here)

Serve and enjoy!
