Creamy Rice Pudding Recipe | Dairy-Free Egg-Free Gluten-Free, Vegan
This rice pudding recipe is simple, creamy and
suitable for most every diet.
A fantastic dessert that's healthy enough for breakfast.
3 Cups pre-cooked organic long grain white rice (This recipe is great for left-over rice)
1/2 cup organic raisins (soaked overnight) optional
For the creamy custard:
Bring to a simmer:
2 cups organic coconut milk or rice milk
1 tsp organic vanilla extract
1/4 Cup organic honey or brown cane sugar
1/4tsp (pinch) Celtic salt
Beat together:
50ml filtered water
6 tbs organic custard powder
Slowly whisk the custard powder mixture into the simmering coconut milk...Whisk on medium heat until thickened.
Add rice and raisins to the custard, stir and let cool.
