Flu Busting Organic Lemon Pie | No Sugar

You can make a delicious organic lemon pie filling 
with ingredients healthy enough to serve to 
someone with a cold and sore throat

Imagine instead of yucky cough meds, you said to the kids "Oh you have a sore throat? 
 Let me make you a pie!" Teehee.


This lemon pie filling takes less time to make from scratch than going to
the store and picking up a fake one.

If you are eating gluten-free simply put the lemon filling in a glass ramekin 
and top it off with meringue and bake them.
Crustless lemon pie is wonderful too!

Lemon Pie filling recipe (Think in 3's!):

The juice from 3 organic lemons + the zest from 1 organic lemon
3/4 cup of filtered water
3 Tbs of raw organic honey
3 tsp organic corn starch
3 egg yolks (reserve the 3 egg whites for the meringue)

Bring the lemon juice, 1/2 cup of the water, lemon zest and honey to a boil,
In a glass or mug, beat together with a fork; the egg yolks, corn starch and 1/4 cup of water until smooth
stirring constantly, slowly pour the yolk mixture into the boiling juice, stir until thickened.


Whip the egg whites (sugar optional - I used 1 tbs of organic cane sugar)

I am honestly tired of seeing "from scratch" recipes that include a box of this, a tub of that and a can of something else...I don't consider a recipe from scratch unless you practically mill your own flour and churn your own butter...:D Seriously though, purchasing a package of lemon "flavored" sugar sweetened artificially colored "lemon" pie filling and tossing it in a frozen pie crust is absolutely not from scratch.
