Simply wash the organic kale and be sure you dry off the leaves well, either use a salad spinner, pat dry with a towel or lay them out to dry off.

One cup of kale contains 36 calories, 5 grams of fiber, vitamin B6 (pyridoxine), 15% of the daily requirement of calcium, 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K.  It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus.

Studies have shown kale actually helps in regulating detox at genetic level.  Due to it's high concentration of carotenoids and flavonoidskale has anti-cancer health benefits. This leafy green is also rich in lutein and zeaxanthin which supports eye health . Kale is also said to lower blood cholesterol levels, reduce the risk of heart disease, detoxify the body, help with circulation, maintains the cardiovascular system, promotes growth and development of bones, prevents osteoporosis and aids blood clotting.

Other research studies show that the vitamin K in kale helps protect the liver and spleen from cancer. Its anti-cancer effects are another interesting topic of research that is still in progress. It also helps diabetics and obese people by reducing glucose intolerance and promoting insulin regulation controls in the body.
