Organic Cream Cheese Icing & Low Fat Wheat Free Carrot Cake Recipe

This organic carrot cake & easy cream cheese icing
has no refined sugars

is wheat-free, gluten-free, sugar-free, soy-free, 
nut-free, dairy-free (omit icing for dairy-free)

Organic Carrot Cake Recipe:
Wheat-free, gluten-free, sugar-free, soy-free, nut-free, dairy-free (omit icing for dairy-free)

1/2 cup organic raisins, soaked in 1/4 cup of water overnight.
2 organic eggs
1tbs organic coconut oil (or sunflower oil)
3 tbs organic honey
4 large organic carrots (finely grated) - 2 packed cups
1/4 cup organic apple sauce
1 1/2 cups of oat flour (grind organic oats in a blender or coffee grinder) use gluten-free oats if needed.
3 tbs baking powder (baking soda works fine too for this recipe)
1/2 cup of sunflower seeds (or any nuts/seeds you like)
pinch of cinnamon
1 tbs organic apple cider vinegar

In a mixing bowl:
Beat 2 organic eggs + 1 tbs organic sunflower oil and 3 tbs of organic raw honey until smooth.

Add 4 large finely grated organic carrots and 1/4 cup organic apple sauce (if you don't have apple sauce you can mulch one apple with two tablespoons of water in a blender)

Stir in 1 1/2 cups of organic oat flour (Just put the oats in a blender on grind or in a coffee grinder and grind into a flour) mixed with 3 tbs baking powder.

Add the soaked raisins, 1/2 cup organic sunflower seeds and a pinch of organic cinnamon.

Grease a shallow loaf pan and spread in the thick batter.

Pour 1 tbs organic apple cider vinegar over the top of the batter then fork it through gently (This activates the baking powder)

Bake in a preheated oven on 350 for 45 minutes or until inserting a knife in the center come out clean.

When cooled, cut on the diagonal & serve on a platter with a side of cream cheese icing.
