Curry Breakfast Scramble Recipe
This simple and quick breakfast scramble is a
wonderfully filling breakfast
for those eating grain-free or for anyone who likes a healthy, hearty breakfast with a kick.
We enjoy it for dinner and snacks a well.
Serves 2:
1 Tbs organic coconut oil
1 cup of fresh or frozen thawed organic broccoli cut into bite size pieces
1/2 can of organic bpa-free garbanzo beans
1 Tbs organic raw honey
1 tsp organic curry powder
Pinch of Celtic salt to taste
Warm the oil in a fry pan, add broccoli & garbanzo beans and fry tossting in oil for 1 minute, add honey, curry powder and stir until broccoli and beans are coated well. Beat the 4 eggs and pour over the mixture in the pan. Scramble with a fork until eggs are cooked. Serve! That simple :)
