Everyone loved this refreshing mellow ice tea
Mom had her annual family barbecue yesterday and aside from bringing my all-time favorite deviled eggs and jelly roll and a gluten-free, dairy-free trifle for my aunt (I'll post the recipe later), I also brought my ginger-mint lemon ice tea which was another great hit.

It's simple to make and will go well spiked with organic vodka or virgin

2 organic lemons
2 organic lemon green tea bags
A handful of fresh organic mint leaves (I like the ginger-mint best for this)
1 overflowing tablespoon of raw organic honey or sweeten to your taste with your choice of sweetener.
2 liters of filtered water
Boil the water and place the teabags in the pot.
Remove from heat and cover the pot .
Let sit for an hour or so until cool.

Slice the frozen organic lemons (Whenever there is a great deal on organic lemons I pop them whole with the peel on in a freezer bag and they freeze wonderfully. They slice easily with only a 10 minute thawing on the counter and they act as ice cubes as well)
Place all other ingredients in a large glass jar and pour the tea over top, stir and add ice cubes.
Refrigerate.
