Oat Balls Recipe | A Simple & Healthy Snack

I completely forgot to blog this one. 
 I had posted it on Facebook a while ago and a friend brought it to my attention again so I decided to blog it.

This great tasting recipe is:

No added fat
Naturally Sweetened (no sugar)
and EASY!


Great for lunches, snacks or meals

Fantastic kid-friendly recipe, no-cook and lots of flavor choices!

Yields 24

3 Cups organic oats
1 Cup of finely chopped organic mixed nuts, seeds and dried fruit
If you have nut allergies simply use any dried fruit and seeds or trail mix that suits you.

Good choices are a mixture of any of the following:

Dried pineapple, apricots, bananas, raisins, cranberries, dates, figs, apples, sunflower seeds, chia seeds, flax, sesame seeds, pumpkin seeds, almonds, hazelnuts, pecans, walnuts.

1 Tablespoon of organic raw coco camino cocoa powder (optional) or 1 tsp of cinnamon (also optional)

Mix the above ingredients in a mixing bowl.

In a saucepan, bring to a light simmer:

1 ½ Cups of water

5 Tablespoons of raw organic honey or pure maple syrup

Add the hot wet ingredients to the dry ingredients and stir with a wooden spoon until it sticks together and pulls away from the sides of the mixing bowl.

1 Cup of coconut (or as another option fine ground nuts or oats) – for rolling.

Roll gently into 1 ½ inch balls (1 heaping tablespoon) and toss into coconut or fine ground nuts or oats (use your coffee grinder).

Refrigerate and eat any time.
