Egg Roll Wrapper Recipe Gluten-free & Eggless

Ohhh yeaaa! Healthy Egg Rolls!! 
Made my own delicious & crispy gluten-free & eggless eggroll wrappers.
Oven baked, filled with loads of veggies and topped with homemade cherry sauce.

Healthy egg roll recipe





Quinoa Flour Wrappers

1 cup of organic quinoa flour
2 tablespoons of ground flax
Mix with enough water to make a firm dough.

Split into three portions and roll thinly on a silpat, use more quinoa flour for rolling as needed.
Cut each piece into 4 squares (For a total of 12 squares)

Fill with egg roll filling and generously brush with oil (I used olive oil).
Place on a baking sheet and bake at 400 for 15 minutes each side.


Egg Roll Filling

1/2 cup shreded cabbage
1/4 cup julienned carrots
1/4 cup ground mushrooms
3 tablespoons sunflower seeds
1 tsp onion powder
Salt & pepper to taste

Saute in pan with 1 tablespoon of oil over medium heat until softened slightly but still al dente.


Organic Cherry Sauce

1 cup of frozen organic cherries
1/4 cup of water
1/8 cup of sweetener (honey, maple syrup, sugar - whatever you like)
2 tablespoons of apple cider vinegar

Simmer in a saucepan until cherries have melted, mash cherries as they are simmering.

Then to thicken, add 1 tablespoon of arrowroot flour to 1/8 cup water, mix well and drizzle into boiling cherry mixture, stir until thickened and remove from heat.
