Maple Butter Pecan Pie
Well of course it contains "sugars" in the form of organic maple syrup,
but there's no granulated refined sugar in this recipe!
This all organic maple butter pecan pie was a
birthday request for a family member:)
1 1/8 Cups organic einkorn flour
1/4 Cup organic cubed salted butter
1 Small organic grass-fed egg
3 Tbs filtered water
Crumb together butter & flour
Beat together egg, vinegar & water
Slowly mix the liquid to the flour/butter crumbs
Gently mix with your hands until it holds together to form a ball
(don't over work it, you should still see some lumps of butter)
Chill dough for 20 minutes
Roll to cover the bottom of a 12" pie plate & crimp edges.
Bake at 350 until golden brown.
1 1/2 Cups organic maple syrup
1/2 Cup filtered water
1/4 Cup organic salted butter
1 tsp Celtic salt
4 tbs Organic arrowroot flour (or corn starch) + 1/4 cup water
2 Tbs Organic whipping cream
Beat together arrowroot flour and 1/4 Cup water
Bring first 4 ingredients to a boil, let simmer for 3-4 minutes, Stir in the arrowroot mixture and continuously stir until thickened. remove from heat stir in cream.
Let cool slightly and pour into cooled pie crust. Once filling is firm, top with organic pecans.
Try not to eat it all in one sitting :)
