Organic Brownie Bottom Carrot Cake Recipe | Honey Cream Cheese Icing

This was a request from my husband for his birthday. 


 And it actually turned out to be a mistake turned fantastic. He almost couldn't decide between a chocolate cake or a carrot cake but decided on carrot. The pan I had was too large for the cake batter, so I ended up making another layer and created this yummy brownie bottom carrot cake.



Recipe:

1⁄4 cup organic honey
1/4 cup organic cane sugar
1⁄2 cup organic sunflower or coconut oil
2 large pastured eggs
1 cup sifted einkorn flour
1 tsp celtic salt
1 tsp baking soda
1 tsp cinnamon
1⁄4 tsp ginger
1 cup organic carrots, grated
1 cup organic nuts, seeds, raisins

Bake for 30 minutes at 350 degrees. Cool 10 minutes in pan and place on cooling rack.

Deviled eggs, sausage, raw cheese, pickles & veggies, all organic.
