Stuffed Organic Portobello Mushroom Recipe | Mung Bean Sprouts

These stuffed mushrooms with a honey garlic topping make a healthy and delicious meal or side dish.


Makes 2:

2 large organic portobello mushrooms (remove the stem and reserve it for the stuffing)
1/4 organic onion
1 organic garlic clove
1/4 organic bell pepper
1/2 cup organic pasture-raised ground meat or grated cheddar
Salt and freshly ground pepper, to taste
2 tbsp. organic olive oil

Brush the mushroom caps with olive oil and set on a baking sheet.
Put all other ingredients in a food processor and pulsate until combined.
Stuff the filling inside the mushroom caps and brush with honey mustard sauce.

Honey Mustard Sauce:

1 tbs organic raw honey
2 tbs organic yellow mustard
1 tbs organic dried minced onion

Preheat oven to 375 degrees F. Bake until golden brown and bubbling (approximately 20 minutes)

Serve with freshly sprouted organic mung beans.
