Organic Chicken Chili Chowder Recipe

This is a spicy twist on chicken chowder that makes a great
warm, hearty & spicy winter meal!


6 Servings:

6 Cups of organic homemade chicken stock with chicken added back in 
(At least 1 cup of cooked shredded chicken)
1/2 cup organic wild rice
2 organic carrots sliced
2 cloves organic garlic minced
4 stalks organic celery thinly sliced
1 small organic onion diced
1 cups of frozen organic peas
1 cup frozen organic corn
4 tbs organic flour (or organic thickener of choice for gluten-free)
1/2 cup organic whipping cream or coconut cream (dairy-free)
4 tbs organic chili powder
Celtic salt to taste

Simmer the wild rice in the chicken stock on low heat with the lid on for about 2 hours.  Add in the chicken all vegetables, chili powder and salt and simmer on low until vegetables are soft (about 20 mins).  Bring to a boil and mix your flour with enough water to make it smooth and pourable (like heavy cream).  Add the flour mixture and stir into the stew to thicken.  Lower the heat to simmer again, leaving the cover off and simmer until thickened.  Remove from heat and stir in cream.
