Gluten-Free Shortbread Thumbprint Cookies & Coconut Flour Giveaway | Closed

Yummy... 
Gluten-free shortbread style cookies with only 
pure organic ingredients!


Recipe:

3/4 cup organic coconut flour
1/4 cup softened grass-fed butter
1/8 cup organic coconut oil
1/4 cup organic cane sugar
2 pasture raised eggs
1 tsp aluminum-free baking powder
1/2tsp celtic salt
1 tsp organic vanilla
4 tbs of your favorite organic jam (homemade is best!)


Mix coconut flour, baking powder and salt.
Cream together butter, coconut oil and sugar. Add eggs one at a time, add vanilla extract. 
Add the above coconut flour mixture, a little at a time until a firm dough is formed.
Roll dough into a 1.5" balls.
Place on a oiled cookie sheet, press your thumb into each center, place a small dollop of jam in each.
 Bake at 350 for 8 minutes, or until lightly browned (be careful not to burn). Cool on a wire rack.

Don't burn your mouth on the jam when you impatiently try one before they are cool :D
