Dairy-Free, Sugar-free Strawberry Custard Pie Recipe

Recently I made an apple pie (recipe here) 
for mom on Mother's Day 
and had enough pie dough left over for a pie crust bottom.



This made a special dessert for myself a Zuki and it was quick & simple.

For the custard filling:
2 cups organic rice milk (use regular organic milk if you eat dairy)
3 tsp raw organic honey
1 tsp organic vanilla
Wisk together in a saucepan
Bring to a simmer

In an empty jam jar add:
1 grass fed organic egg yolk
3 tbs organic corn starch or kudzu starch
1/8C organic rice milk

Shake until smooth then stream into above simmering mixture whisking constantly
on low to medium heat until thickened.

Pour into pie crust and let cool in refrigerator for 1 or 2 hours.

Before serving use 24 fresh or thawed frozen strawberries, warm them in a saucepan with 1 tbs of honey and pour over set cooled custard.  ENJOY!
