Simple Mashed Potato Soup Recipe | Use Leftover Potatoes

This simple hardy and delicious soup is a great way to use up leftover mashed potatoes.


Recipe:
2 cups organic mashed potatoes
1 1/2 cups filtered water (or 1 cup water + 1/2 cup organic  milk or cream)
1/2 cup organic shredded cabbage
1/2 cup organic spinach
1/2 chopped organic onion
Celtic sea salt
Pepper
1 tbs organic grass fed butter (or olive oil)

In a small soup pot, saute the onion and cabbage in butter until tender...add water, spinach and potatoes then stir with a fork breaking up some of the lumps until the soup looks creamy.  Bring to a light simmer then salt & pepper to taste.
