This is a great warm stick-to-your-ribs meal
that I have been cooking quite often lately
I never stick to recipes so I encourage everyone to just take inspiration from my recipes and change it up to suit your taste and dietary needs.
1 grass fed organic chicken breast, 1/2 organic onion, 1 clove of organic garlic (grind together in a food processor) use tofu for vegan.
3 cups of cooked, drained and rinsed organic pasta (Rice, kamut or quinoa are best)
12 large fresh organic button mushrooms sliced
1 organic pepper (diced)
1 can of organic whole tomatoes
1 tbs raw organic honey
3 tbs organic spice blend with sesame seeds
(I will post the recipe for my organic spice blend "Everything Spice" below)
1 tsp Celtic sea salt
1/2 cup cubed organic cheese (I use Compliment's organic lactose-free mozzarella or sheep feta) you could also use an organic rice cheese.
3 tbs olive oil
Warm the oil in a large saute pan or pot. Fry the ground chicken mixture with 1 tbs of everything spice until cooked. Toss in the pepper and mushrooms and cook until soft. Dump in the tomatoes and cut them up with the side of your ladle. Stir through the honey. Toss in the pasta, cheese, salt and spices and heat until cheese is melted. Serve.
For the "Everything Spice"...
I purchase all of my organic herbs, spices and seeds at Mountain Rose Herbs.
I use this spice in soups, stews, chili, on roasted vegetables, meat....on Everything.
This is all approximate...
In a large mason jar place
1 cup of organic sesame seeds
1/4 cup each of organic cayenne, onion flakes, garlic granules and oregano
add 1/8 cup each of organic chili powder and turmeric
add 1/16cup each of organic cracked black pepper, celery seeds and Celtic salt
Shake well and sprinkle on anything and everything.
