Garden Fresh Egg Foo Young Recipe

This is an excellent way to eat a ton of veggies, all different varieties from the garden.



Julienne or grate 6 cups of organic vegetables
Onions are a must and any of the following mixture will do
(lettuce, cabbage, carrots, spinach, celery, mesclun mix, peppers…)
Lightly wilt the veggies in a large pan with a pinch of salt and a tbs of water.

Beat together 5 grass fed eggs, 2 tbs of organic tamari and ½ tsp organic pepper.
Flatten veggies out on the bottom of the pan and pour the egg mixture over top.
Let cook on medium heat until solid.
Serve with fresh spring onions and rice or simply eat it alone.

We love it for breakfast too.
