(Gluten-free, Organic, Vegetarian)
2 ½ cups of organic oats
1 cup organic oat flour (grind fresh rolled oats in a coffee grinder)
¼ cup grass fed butter (margarine for vegan)
2 tbs organic brown sugar
Rub together above ingredients until crumb texture. Press 2/3 of the mixture into the bottom of a shallow 6×9 baking pan.
2 lbs of organic dates
1 cup water
1 tsp grass fed butter (margarine for vegan)
Simmer dates in water until softened then mash until smooth, stir in butter and pour the date mixture over the oat bottom. Then sprinkle the top with the remaining 1/3 of the oat mixture.
Bake at 350 until dates are bubbly and top is golden (aprox 15 mins)
