Organic Curry Chicken Dumplings Recipe

These simple dumplings in a curry broccoli sauce
make a delightful hearty meal

For the dumpling filling:

1/2 cup of grass fed ground meat or mushrooms(I used chicken)
1/2 minced organic onion
1 stalk of minced organic celery
1 clove finely chopped organic garlic
Salt & Pepper.

Fry all of the above ingredients together in a frying pan, the set aside to cool. No need to wash the pan as we will make the sauce in the same pan.

For the dumplings:

While making the dough, boil a medium pot of water.

1/4 cup organic flour
1/8 cup of water
Pinch of Celtic salt

To make the dough mix 1/4 cup of organic flour with enough water to make a stiff dough
(aprox 1/8 cup).

Kneed the dough then roll it out into a thin rectangle. Cut the rectangle into two equal parts.

Place 1 tbs dollops of the filling above in rows and columns on one sheet of the dough, leaving 1/4 inch spaces in between. Using your finger or a pastry brush, paint the spaces with water. Lay the other sheet on top and press around the dollops of filling sticking the spaces together. Use a knife or a ravoli cutter and cut each of the dumplings apart, pinch the corners together.

Toss them in boiling water for 2-4 minutes until they float then carefully drain trying not to break them open.

For the Sauce:

In the frying pan lightly saute:

2 Cups of organic broccoli florets (fresh or frozen)
1/2 Organic sweet red pepper
1/2 Organic onion
1/4 Cup of organic raisins

Turn the heat on low then add:

1 can of organic coconut milk
2 tablespoons of organic curry powder
1 tsp raw honey
1 tsp Celtic salt

Just before serving toss in the dumplings.

Yummy.
